Cody recently began his transition to a plant-based diet and we’ve been looking for recipes that will make that easier on him. So we whipped up this meatless meatloaf in hopes to find a comfort food that Cody and others transitioning to a plant-based diet would find appealing.

I found my recipes below

Meatless Meatloaf:

2 Lbs (26 oz.) Canned Chickpeas
10 oz. Mushrooms Medley (Cremini, Oysters and Shiitake)
1/2 Cup Walnuts
1/2 Cup Cashews
1 Cup Red Quinoa
1 Cup Bread Crumbs
2 Flax Eggs
1/2 Cup Coconut Milk
3 Tbsp Tomato Paste
3 Tbsp Nutritional Yeast
3 Tbsp Vegan Worcestershire Sauce (I used Annie’s)
1 Tsp Liquid Smoke
1/2 Tsp Cayenne Pepper (Optional)
2 Tbsp Garlic Powder
1 Cup Red Onion
1/2 Cup Red Bell Pepper
1/2 Cup Green Bell Pepper
4 Cloves Garlic
1/2 Cup Basil
1/4 Cup Sage
1/4 Cup Cilantro
1/4 Cup Tarragon
1/4 Rosemary
Salt & Pepper (To taste)

Preparation: 30 Minutes

Baking Time: 1 hour

Maple Glaze Sauce:

Ingredients for the Maple Glaze:
1/4 Cup Tomato Paste
2 Tbsp Maple Syrup
2 Tbsp Apple Cider Vinegar
1 Tbsp Soy Sauce
1 Tsp Paprika
