• 400g Rice Noodles
• 100g Mangetout
• 3 Cloves of Garlic
• 2 Peppers
• 4 Spring Onions
• 1 Carrot
• 250g of Mushrooms
• 3 Tbsps Rice Wine Vinegar
• 1 Tbsp Cornflour
• 5 Tbsp of Kikkoman Soy Sauce
• 1 Tbsp Sugar

1. Make your Chow Mein Sauce. Grab a bowl and add the Cornflour. Then add the Soy sauce. Mix them together until the Cornflour is fully absorbed. Then add your Vinegar and your Sugar. Mix everything together until you have a nice smooth sauce. Set aside.

2. Prep your veg. Dice up your Mushrooms into bitesize strips. Then slice your Carrots, Peppers, and Mangetout into matchsticks. Finish by finely slicing your Garlic and Spring Onions.

3. Add Mushrooms to a wok with a splash of Vegetable Oil. Fry for 5 minutes, and as they begin to brown, remove from the heat. Once the Mushrooms are cooked, start adding in your veg. Add your Pepper, Mangetout and Carrots. Fry for 3-4 minutes until they start to char, and then add your Garlic. Toss everything together, and cook for 2 minutes. Once nice and cooked, add around 3/4 of your Chow Mein sauce.

4. Cook your Rice Noodles. Once ready, drain, and leave in a bowl of cold water, ready for the wok.

5. At this point, add your Rice Noodles. Toss everything together and then add the rest of the Chow Mein Sauce into the wok. Once mixed in, transfer everything into a bowl and top with the sliced Spring Onions and a small splash of Kikkoman Soy Sauce. Enjoy.

It does't say but I will assume the ingredients list is for 4 people but you are are cooking for one?
Can rice wine vinegar be substituted with cider vinegar?
