Peanut Soup? I had never heard of it. But it is in the Paula Deen cook book, and since we have to veganize every recipe, why not today. It has been really rainy and gloomy in Atlanta too, so I was craving soup anyway.
Vegan Creamy Peanut Soup Recipe
1 tablespoon vegan butter
1 cup vegetable broth
1 cup almond milk
1 cup peanut butter (try to find a healthy variety)
1 cup vegan sour cream
2 packs of Perfect Fit Protein
1 cup water
2 tablespoons agave nectar
1 teaspoon cinnamon
Heat vegan butter in a large saucepan over medium-high heat.
Stir in vegetable broth and almond milk, and bring to a simmer.
Whisk in peanut butter and vegan sour cream until well incorporated.
Add Perfect Fit Protein and whisk until the soup thickens.
Whisk in water until a velvety consistency is achieved.
Season with agave nectar and cinnamon to balance out the peanut butter if necessary, but if you used a crappy, cheap peanut butter you probably will not need the addition.
With it bold flavors, this is a great treat for peanut lovers everywhere. If you do not like peanuts (or are allergic) avoid at all cost. I liked it. The peanut soup had a rich and velvety texture and was perfectly balance with agave nectar and cinnamon. This would be great a soup in a cup small meal in the mid afternoon.
