This is the closest version of authentic carbonara I've ever seen, bar none! Jaime gets 5 stars. If you would like to try a fantastic version firsthand, try it at Maurizio Trattoria Italiana in Encinitas, CA, on the Coast Highway 101. Every time I go there, it's impossible for me to ever order anything else, although other selections on the menu are equally outstanding.

Almost… you shouldn't cut so much the guanciale and the pepper has to go inside the mix of pecorino and eggs…… but those are just tips to perfection, your recipe is quite correct… and that's surprising!
