VEGAN JAMBALAYA | EASY ONE POT MEAL

Jambalaya is traditionally a very meat heavy recipe, but I have VEGANIZED IT! A bunch of you asked for this recipe so here it is!

This is super easy to make in big batches so it would be perfect for meal prepping or a family dinner.

Simnett Nutrition Style Jambalaya

Ingredients:
2 green bell peppers, chopped
3 celery stalks, chopped
1/2 white onion, chopped
2 tomatoes, chopped
1.5 cups brown rice
4 cups low sodium veggie stock
1 can diced tomatoes
1 cup tomato sauce (I used a basil/herb one)
1 tsp paprika
0.5 tsp smoked paprika
1 tsp thyme
1.5 – 2 tbsp chopped or minced garlic
pepper to taste
1 pack of vegan sausage or use tofu, tempeh or anything you want!
chopped green onion for garnish

This is a low sodium recipe, as I used low sodium veggie stock, however salt really brings out the flavour, so season to taste if you want.

For this recipe you will need 2 pans, one frying pan and one large sauce pan that is deep enough to cook rice with lots of liquid in it.

Directions:
1. add chopped onion, green bell pepper and celery to large preheated pan. Saute with veggie stock until soft and tender.
2. add the spices (paprikas, thyme, garlic, pepper), stir to coat veggies
3. add diced tomatoes, tomato sauce, stir well.
4. add brown rice and veggie stock, stir well and cover. bring to a boil and turn down to low heat to allow rice to cook. Stir occasionally. Brown rice takes approx. 40 mins to cook.
5. when the rice has been cooking for approx 30 mins, you can go ahead and heat the sausage (or whatever you choose to use) in a separate frying pan.
6. add sausage to jambalaya when the rice is cooked and you are ready to serve.

Serve with chopped green onion on top. Feel free to make this recipe your own by adding chopped kale, chopped carrot or other veggies to the mix! Enjoy 🙂

Hey Derek, great channel, Kroger supermarket carries Cajun Mirepoix (pronounced meer-PWAH) in their frozen veg section, I don't know if you have Kroger there, but other groceries probably carry it. Although mirepoix has many variations as to its constituents, the cajun mixture is exactly what you are using i.e. onion, celery, and green bell pepper ( Kroger's is diced finely). It's not organic but, then, most organic food is grown using fertilizers such as composted manures, blood, bone, feather, or fish meal, or some combination of those things. We know where most of that comes from, but I don't think most vegans consider this, and in my experience by far most vegans prefer organic. So in buying organic food we are supporting animal slaughter…usually. I know this is not what most vegans want to hear (I didn't) but, yes, we have another difficulty. There is a form of organic agriculture called veganic agriculture which doesn't use animal-based products but also qualifies as organic. I live on a farm and am working on that very type of agriculture. There are farms in existence like that and Mic the Vegan has a video citing examples of such , also a book "Growing Green" by Jenny Hall and Iain Tolhurst (there's a YouTube video "Growing Green with Iain Tolhurst" too). Iain exemplifies the potential of veganic agriculture in practice on his 17 acre farm in England, 20+ years successful. Check out "Vegan Organic Network" also on YouTube, et al. "A mother's work is never done", I'm neither a mother nor a woman but somehow that old addage seems to fit.

Was wondering about calories!!! For example if I need 2000 calories to lose weight and workout and lose 500 calories, do I need to eat 2500 calories or do I keep 2000???? Thank u for any help… hope this question makes sense

This looks delicious Derek! I grew up in New Iberia, LA and have lived in New Orleans for 8yrs… The jambalaya I grew up with doesn't usually have that much tomato.

There are other Cajun dishes that I've tried to veganize, but they tend to be meat-heavy and turn out less than satisfying. Mock meats aren't as readily available here, and the ones that are are quite expensive.

Do you have any videos on how to make homemade vegan sausages? Could make a badass sausage and okra gumbo…

If you don't have minced garlic. You can use 1 or 2 fresh cloves. If you make it for less people use 1 otherwise its to strong. 🙂
