My Indian inspired vegetarian meal prep recipe is perfect if you’re on a budget. It’s also great for weight loss when planning your lunches for the week ahead.

Biryani ingredients (Serves 4 | Prep time: 10m | Cooking time: 40m | 346 calories 6.7g fat p/serving):

– ½ Cauliflower
– 1 Large onion
– 1 Large carrot
– 1 Large potato
– Oil (to roast)
– 200g Basmati rice
– 1 tbsp Curry powder
– 2 tbsp tomato puree
– 1 Vegetable stock cube
– 70g Green beans
– Salt (to season)
– Handful fresh coriander
– ½ Red chilli
– 30g Cashew nuts

Very tasty, can I ask Warren when you give the temp as 180 is that a fan oven temp or conventional oven, took my cooker a bit longer than 20m to cook the recipe but it is going to Steptoe’s yard next week, so old I think Fanny Craddock used it for doing her 70s Christmas Dinner, so the new cooker is fan assisted, just so I can get temps correct, tasted bloody lurverly by the way ✌️☮️
