Using carrot in any tomato based sauce is a great trick to help with the acidity as opposed to what some people do, adding sugar. I personally like to put a little balsamic vinegar in my tomato sauce, not enough to heavily affect the taste but enough to add that tiny sweetness and to round out the flavor. I add about a tablespoon and taste and adjust as I like.

I have done similar combination of veggies salsa many many times and I do add red paprikas & red chilli's too, you got to try to roast the paprika & aubergine they really give a new deep layer of flavor, thanks for sharing Kerryann.
