VEGAN COFFEE CAKE RECIPE
I usually don’t make such bold claims (like the title says), but this really IS the best coffee cake you will ever taste! A huge bonus – is that is vegan-friendly and it can also be gluten-free.

I like to make things homemade that you can usually buy at the store and this is one thing that is so much better (I promise) than what you could purchase. It is super easy to make and you can control the amount of streusel topping that you put on top. If you like a lot of topping, go ahead and use all of the topping ingredients…if you like less, then you can use half of the ingredients.

Make sure to have a nice glass of milk (dairy or non-dairy) nearby when you have a slice (or two) as this is just so darn delicious!

RECIPE:

Crumb topping:
1 1/4 cups all-purpose flour
1/3 cup sugar
1/3 cup brown sugar
2 teaspoons ground cinnamon
1/4 teaspoon salt
1/2 cup vegan butter, melted

Cake:
1 1/4 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup soy or almond milk
1/2 cup canola oil
1 teaspoon white or apple-cider vinegar
1 teaspoon pure vanilla extract

To make the topping:
COMBINE in a medium-sized bowl – flour, sugar, brown sugar, cinnamon, and salt
ADD melted butter. Get 2 forks and toss (like you are tossing a salad) and do this until it resembles small pea-sized shapes
To make the cake:
PREHEAT the oven to 325 degrees
GREASE an 8-inch square pan (or spray with non-stick vegan spray)
INTO A LARGE BOWL, whisk together flour, sugar, baking soda, baking powder, and salt
IN A SMALL SIZED BOWL whisk together milk, oil, vinegar, and vanilla
COMBINE the wet mixture and the dry mixture and whisk until just combined (you do not want to overmix – just combine)
POUR the batter into the prepared pan and evenly sprinkle with the crumb topping
BAKE for 35 – 40 minutes, or until a toothpick inserted in the center comes out dry
COOL completely and enjoy!

NOTE: To make cake gluten-free, use gluten-free flour.
