A smooth, creamy vegetable soup that’s full of flavour. Make it into a meal with plenty of bread and butter.One of the simplest but most tasty soups of all.

Ingredients:

LEEKS 1 large
BUTTER 2 TBS
STOCK 3 C
POTATOES 2 N
2 TS
WHITE PEPPER POWDER 1 TSP
SALT TO TASTE
GARLIC CHOPPED 1 TSP
CHOPPED ONIONS 1 CUP
CREAM 2 TBS

METHOD:

Heat oil in a pan add chopped garlic, chopped onion sautéed for some time,
Add chopped leeks; add diced potatoes cook for some time.
Add stock and cook for 5 minutes,
Remove at from the stove, and blend it like a paste,
Again pour the paste in to the sauce pan add some more stock,
Add salt and pepper powder and bring it to the boiling,
After removing form the stove add fresh cream and serve it.

Just had this at Sweet Tomato. It was not blended though. A little chunky. It was vegan so I assume the stock was vegetable based

I LOVE this preparation! Usually everyone adds sage to this (which I'm allergic to) so great to see a more simple pure version as I love this soup (except for the sage lol)

A really nice variation is to use soured cream instead of regular cream – the combination of flavours is INCREDIBLE
