Low calorie cooking spray
2 carrots, finely diced
2 celery sticks, finely chopped
1 onion, finely chopped
2 garlic cloves, crushed
1 tbsp freshly chopped rosemary
400g can chopped tomatoes
200ml chicken stock
a small handful of freshly chopped flat-leaf parsley
salt and freshly ground black pepper
Spray a pan with low calorie cooking spray and saute the carrots, celery, onion and garlic over a low heat for 6 – 8 minutes until softened.
Add the rosemary, tomatoes and stock. Bring to the boil, reduce the heat, cover and simmer for 20 minutes until reduced slightly and thickened.
Stir in the parsley and season well before serving.
