Today I’m sharing with you how to make a spicy and flavorful potato hash that is a true favorite in my house! It’s so simple and easy to make, which makes it a perfect summer recipe.

vegetarian potato hash | English Recipe:
(Makes: 4-6 servings)

8 medium potatoes
2 tbsp vegetable oil
2 onions
4 garlic cloves
1/3 cup pies
1/4 cup chopped parsley
1 – 1 1/2 tsp salt
1 – 1 1/2 tsp dried thyme
1 – 1 1/2 tsp ground paprika
1/2 tsp pepper
(Season to taste, the measurement are just a guideline)
Garnish with freshly chopped parsley


1. Peel the potatoes and onions, and cut them in 1/2 inch thick pieces. Finley mince the garlic.

2. In a saucepan over medium heat with the oil, add the potatoes and cook them covered with a lid for about 15 minutes.

3. Once there, add the onions along with the spices, and let cook covered for another 10 minutes or so. Reduce the heat to medium – low and cook further for 5 minutes, covered. Remember to give everything a stir once in a while so the potatoes don’t stick to the pan.

4. Once the potatoes are about 3/4 of the way cooked through, increase the heat to medium – high and let everything cook for 10 – 15 minutes, uncovered, stirring every now and then. (Be careful not to mash the potatoes)

5. When the potatoes have developed a beautiful golden brown color around the sides, add the garlic and let cook for a couple of minutes.

6. Turn the heat off, and sprinkle over the peas and the chopped parsley, and give everything an additional quick stir.

7. Serve as is, or with a fried egg.

2 msk olja
2 gul lök
4 vitlöksklyftor
4/5 dl ärtor
3/5 dl grovhackad persilja
1 – 1 1/2 tsk salt
1 – 1 1/2 tsk torkad timjan
1 – 1 1/2 tsk paprikapulver
1/2 tsk peppar
(Krydda efter smak)
Garnera med färskhackad persilja
