I love making hot and sour soup as a late night supper in the wintertime. It’s filling, but not too heavy, warming, tangy and luscious.

I discovered wood ear mushrooms about 6 months ago and they are by far my favorite kind to eat. So good!

Looked at your recipe. Gotta give it a try. So far, I've never had my H&S soup come out the same way twice using the same recipe. Irritating and probably operator malfunction. As for white vinegar, I really like it in my soup. Black vinegar, which you don't use, has a more rounded flavor similar to balsamic vinegar.

Whenever the recipes call for Chinese vinegar I use Braggs Apple Cider Vinegar with the mother. I would be interested to know how different the taste is between the two.
