Don’t have enough time to meal prep? Well we have an super easy vegan recipe – italian noodle soup that you can whip up in less than 30 minutes. Ingredients below!

1 pkg of Field Roast Italian Simulated Sausage
1 pkg of fresh mushrooms or canned
1 can of no salt diced tomatoes
1 can of no salt chickpeas
vegetable stock ~ any kind you have on hand
1 pkg of kale slaw ~ so good
1 box of fusilli noodles (rice, corn and quinoa)

This looks delicious, but you may want to mention to people that the first ingredient in the vegan sausage you’re using is vital wheat gluten. I mention this because you used GF pasta and mentioned it for those who may be gluten intolerant, but gluten is the first ingredient in the sausage 🙂 Love your recipes.

I love pasta in soup but it absorbs all the broth after it sits a bit so I prefer keeping it separate from soup and adding it at re-heat time. Thoughts?
