EASY RICE COOKER CAKE RECIPES: Easy Fruit Cake Recipe Without Oven

INGREDIENTS:
• 2 3/4 cup (400g) DRIED FRUITS & NUTS (1/2 cup or 50g sliced almonds)
• 2 cups (260g) ALL PURPOSE FLOUR
• 2 tsp (6g) BAKING POWDER
• 1 tsp (3g) GROUND CINNAMON
• 1/2 tsp (1g) GROUND NUTMEG
• 1/4 tsp (1g) GROUND GINGER
• 1/4 tsp (1.5g) GROUND CORIANDER
• 1/8 tsp GROUND CLOVES
• 1/2 cup (125g) UNSALT BUTTER (soft)
• 1/2 cup (70g) BROWN SUGAR (sifted)
• 3 LARGE EGGS
• 1 tbsp (40g) FRUIT JAM (round heaping spoon, any flavor)
• 1 tsp (4g) VANILLA EXTRACT
• 1 tsp (4g) ORANGE EXTRACT (optional)
• 1/4 cup (60ml) MILK
• 1/4 cup (60ml) APPLE JUICE (omit for drier cake or subs for alcohol)

HOW TO:
1. Cut dried fruits and nuts (any fruits or nuts you like) into bite size pieces. I used dried raisin, cranberries, dates, pineapple, mango, kiwi, papaya, guava and sliced almonds
2. Sift flour, baking powder and spices into a bowl and mix well
3. In large mixing bowl, beat soft butter and brown sugar for about 1 minute. Beat until creamy and light color. Then add one egg at a time. Add the jam, vanilla and orange extract (if using). Beat for 30 seconds.
4. Pour in half the flour and half the milk, then use a spatula to fold the mixture. Add all the flour and milk, then mix until white flour is almost gone. Do not over mix or cake will be dense and dry.
5. Fold in dried fruits and nuts
6. Add apple juice and mix until incorporated. Omit if you like your cake a bit drier. Or substitute with rum or brandy if you want alcohol.
7. Line or oil your pot and pour batter in. Spread batter evenly onto the bottom and tap pot a few times.
8. Bake for 3 COOK cycles (about 1 hr and 30 minutes) then check. If needed, bake for another 30 minutes. Mine was 4 COOK cycles, about 2 hours.
9. Let cake cool completely before cutting. Store in air tight containers.

OVEN BAKING:
Bake in pre-heated oven of 300F (150C) for 1 hour and 15 minutes. Check using a toothpick. If needed, bake for 10 additional minutes or until done. Ovens vary so baking time will vary.
