Tonight for tea I made this lovely cottage pie…I decided to use Quorn (mock meat) for a wee change. It’s a really nice alternative and tastes just as fab as the meat version 🙂
I’ve listed everything I used below…in case you want to give it a go for yourself.

I used (serves 3)
300g Quorn or other TVP/vegetarian ground beef alternative
1 Large onion (diced)
1 Clove of garlic finely chopped or 1 teaspoon minced garlic
200g Frozen diced vegetables (peas/carrots/corn/green beans)
1 Tablespoon tomato puree
400ml Vegetable stock (I dissolved two Kallo vegetable cubes in boiling water)
A little vegetable oil for frying
700g White potatoes such as Maris Piper or King Edwards (a nice floury potato)
A knob of butter
A splash of cream
A handful of grated cheese (I used Cheddar)

Enjoyed the vid! We visited Scotland a few years ago and enjoyed the amazing beauty everywhere. We were inspired to visit the Western Isles after reading the Lillian Beckwith books. You likely have read, The hills is Lonely, The Sea for Breakfast, The Loud Halo etc. I even recognize some of your video scenes. Love your travelogs. 💕🇨🇦

YES …I hung on!!! really enjoyed the footage of the countryside drive! My husband and I are vegan so this recipe interested me. I would use oat milk and maybe some soy cheese. Looks good.

By the way, I love your recipes but allergic to dairy products. The alternatives to dairy are good but just don’t quite cut the mustard when it comes to that creamy feel in the mouth. How I miss that. Carry on doing what you do, you may get your dream home on the isle. 👏👏👏
I have made this twice now, the first time, it was good but I made it a second time with some additions, a teaspoon of Worcestershire Sauce, a tablespoon of dark brown mustard, a pinch of dill weed, some parsley flakes, and between the gravy mix and potatoes, I added a layer of Red Leicester Cheddar….lip smacking delicious! Thank you for the recipe!

I like to use sour cream and evaporated milk, along with Kerrygold Garlic & Herb butter, in my mashed potatoes…it's yummy! And I also like to use ground turkey…
