Nikki’s Beachy Vegan Tuna Bowls Recipe:

Step 1: Pink + Green Cabbage Slaw

1.5 cups finely shredded cabbage
4 radishes, finely shredded
1/4 cup finely diced red onion
2 heaped tbsp chopped cilantro
1/4 cup white rice vinegar
2 tbsp lemon juice
1/4 tsp kosher salt
5-8 grinds of freshly cracked black pepper
2 generous inches of sugar

Combine ingredients in a large bowl and toss to combine. Let it marinate for at least 30 minutes or better, overnight 🙂

Step 2: Cilantro Lime Rice
1/2 cup dry white rice, cooked to package instructions
1 tsp lime zest
the juice of half of a lime
1/4 tsp kosher salt
1/4 tsp black pepper

Mix and add more lime, salt, or pepper to taste. Note: this is a great way to spicy up meal prepped rice and if you have it pre-made, this dinner will come together super quickly!

Step 3: Make the vegan tuna
1 Good Catch Vegan Tuna Packet
2 tsp olive oil
2-3 big pinches of Old Bay Seasoning
1 tbsp lemon juice
1/2 tbsp chopped parsley

For this dressing I basically made my Tahini Lemon Dill Dressing https://nikkivegan.com/highly-adaptable-garden-veggie-chickpea-salad/ but I used fresh about 1 tbsp of fresh dill and a little bit of nutritional yeast. Salt and pepper to taste. It was delicious! Highly recommend using fresh dill if possible. Also note, this dressing thickens as it rests so make it ahead of time so it can get nice and creamy 🙂

Step 4: Assemble

To make the bowls, fill half of the plate with salad greens and then add in the Cilantro Lime Rice, warm seasoned “tuna,” and cabbage slaw. Top with lots of fresh herbs – I had a mix of cilantro, dill, and parsley (I try to always have those one hand in the summertime because I put herbs on everything!) – and then I drizzled the dressing on top.

That wine wasn’t Pinot Grigio. I buy that one at Whole Foods all the time so I recognized it and I was like “whoa, I think that’s Sauvignon Blanc”. But I get that you can use any dry white wine.
