Coriander leaves are an ingredient that doesn't go well in our home. What could you substitute it with? We have parsley and thyme growing like weeds in your yard, either of these, or something else?

Great fusion dish! I'm going to try it ☺ In Albuquerque I make something similar with vegan crumbles, mashed potato, green chile and cheese and call it a stuffed nacho (similar to a fried Chalupa in TexMex). If it is rolled it is a Flauta (flute) and can be fried or baked, then traditionally filled with mashed potato and cheese with roasted green chile. Here we are asked "Red or Green?" (chile) at restaurants and taco stands. If you want both you say "Christmas" and get whatever you ordered smothered in half chopped roasted green chile and half red sauce (like fresh hot enchilada sauce). Red is usually spicier (hot).
