Recipe for Aloo Shimla Mirch:
Heat 50 ml oil
Add 1/2 tsp cumin or jeera, and let it crackle
Add 1 medium or large chopped onion
1 inch ginger finely chopped
Add 1 small chopped green chilli
Add 3 cloves of finely chopped garlic
Add 1 medium capsicum cut into cubes
Saute well till capsicum is cooked
Add 1 large boiled potato cut into cubes
Add 1/2 tsp turmeric powder
Add 1/2 tsp of red chilli powder
Add 1/2 tsp of dhaniya or coriander powder
Add 1/2 tsp of Garam Masala powder
Add in cubes of tomato
Add salt to taste
Add chopped green coriander

Serve with roti, prata, naan or flatbread.
