Today I am showing you three recipes that are perfect weeknight dinner ideas! These are quick and simple to make, plus they take between 15-30 minutes TOPS. With these videos, I hope to show you that eating vegan meals doesn’t have to be time-consuming or complicated. These aren’t fancy by any means but they taste great and will make you feel great too. Enjoy!
Creamy Lasagna Pasta:
1/4 cup white onion, chopped
1 clove garlic, minced
1 tbsp olive oil
1-2 cups broken lasagna noodles
1-1/2 cups marinara sauce
1/2 cup cashew cream or almond/coconut/cashew milk
salt/pepper to taste
and add any veggies you like! I love adding frozen kale.
Boil the pasta until cooked. Saute the onion and garlic on medium heat in the oil until onion becomes translucent. Add the marinara sauce and cashew cream. Stir to combine. Add the cooked pasta and toss to coat. Add whatever extra spices and veggies you like. Get creative!
Baked BBQ Tofu:
6 oz. firm tofu, sliced
1/3 cup bbq sauce
frozen french fries (or a baked potato or rice or whatever other side you like!)
Line half of a baking sheet with parchment paper. Bake at 425 F (220 C)for 10 minutes, flip and add sauce to both sides of the tofu slices, then bake another 10 minutes.
Teriyaki Tofu & Broccoli:
1/2 cup dry rice
1 clove garlic
1 tbsp sesame oil
3 oz. firm tofu, cubed
2 cups, chopped broccoli
1/2 cup teriyaki sauce (or make your own sauce using a recipe from this video: https://www.youtube.com/watch?v=LE6mLOezuJQ )
Cook the rice according to the package directions. Fry the garlic in the sesame oil for 3 minutes. Add the tofu and broccoli and cover with a lid to help it cook faster. Once the broccoli is easy to pierce with a fork, add the teriyaki sauce and stir to combine. Cook another 2-3 minutes until sauce thickens. Serve over cooked rice (or noodles!) Enjoy.

I made the teriyaki tofu & broccoli tonight for dinner for my boyfriend and I tonight and we both loved it! I also added rosemary to the rice while it was cooking because he loves rosemary and it was delicious!
I agree that these are very quick and easy but they are not healthy at all. I am vegan but also try to eat healthy…none of these meals contain vegetables…and frozen fries and a brick of tofu…not very homemade 🙁

I’m making the lasagna pasta tonight with almond milk and it’s delicious! I added some red wine to the sauce, and some mushrooms and spinach and it’s so good. I made a tofu ‘ricotta’ also to top it 🤗 10/10 recommend!

I’ve been vegan for a while now but I’ve been looking for easy staple meals and no matter what channel I go to they’re always so complicated and require a ton of stuff even though they’re labeled “easy vegan meals” this video is actually true to the title.
