These crispy Panko Cauliflower Bites have a spicy buffalo sauce and are topped with parmesan and then oven roasted for delicious, spicy goodness that’s perfect as both game day appetizers and easy vegetarian dinners.

You’re going to love how soft and tender these panko cauliflower bites are on the inside, and how the panko makes them super crunchy on the outside . They’re an easy vegetarian recipe that bakes up in less than 20 minutes, and are packed with flavor thanks to the buffalo sauce.

Spicy Panko Cauliflower Bites AKA Buffalo Cauliflower Bites Ingredients
1 large head cauliflower, washed and drained
1/2 cup panko breadcrumbs
1 tablespoon unsalted butter, melted
2 tablespoons avocado oil or olive oil
1/2 cup buffalo wing sauce (I’m using Frank’s Wing Sauce)
1/2 teaspoon onion powder
1/4 teaspoon garlic powder

Panko Cauliflower Bites AKA Buffalo Cauliflower Bites Directions
Begin by preheating your oven to 425 degrees. Melt the 1 tablespoon of unsalted butter. Add 2 tablespoons avocado oil (or olive oil), and 1/2 cup buffalo wing sauce. Add 1/2 teaspoon onion powder, and 1/4 teaspoon garlic powder. Then give the mixture a good stir.

Break the cauliflower florets into small chunks, keeping some of the stem on each piece.

Spread about 2 tablespoons of oil across a sheet pan. Dip the cauliflower pieces into the buffalo sauce mixture, then swirl them in the panko breadcrumbs. Once the sheet pan is filled, top the panko cauliflower bites with freshly grated parmesan cheese. Bake for about 15 – 20 minutes until the cauliflower is crispy on the outside or soft on the inside.

For the quick homemade Ranch Dip, combine:
1/2 cup sour cream
1/2 cup mayo
1/2 cup buttermilk
1/2 teaspoon dried dill
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
Add 1/2 teaspoon apple cider vinegar and 1/2 teaspoon lemon juice and stir.

I like to serve these tasty panko cauliflower bites with a little more parmesan and serve it with the homemade ranch dip I’ve noted above.
