My husband hates lentils so I made it last night to change his mind. He surprisingly really liked this dish and had 3 servings! I soaked the lentils for about 4 hours to cut the time in half and added sunflower butter instead of almond butter. I didn't have any on hand. Result: It came out delicious! I was afraid it would taste too much like a Thai style curry with the coconut milk but it didn't. The coconut milk thickened the gravy like heavy cream but without excess calories. I didn't miss the heavy cream at all! Great recipe.

The title is complete bullshit. The argument isn't that vegan food tastes like shit (although it does), it's that vegan food and the vegan diet wreaks havoc on your health. Get a clue.
