What’s the dinner tonight? Sharing my best recipe to make Vegetarian Enchiladas at home, try these enchiladas stuffed with Broccoli, Beans, and Peppers, for dinner tonight…

Ingredients List (Serving Size 6-7 Enchiladas)

– 2 tbsp Vegetable or Olive Oil
– 2 tsp Minced Garlic
– 1 Medium Size Chopped Onion
– 1 1/2 Chopped Broccoli
– 1 cup Chopped Red Bell Pepper
– 1/2 cup Corn
– 1/2 cup Boiled Black Beans
– 1 tsp Oregano
– Salt & Pepper as per your taste

Tip: If you like crispy enchiladas then you can skip the step to spread Enchilada Sauce on Tortillas, before putting vegetables
