If you were craving lasagna it might make more sense to make a classic lasagna first then turn those leftovers into a soup. But I don't know many people that would crave lasagna and lasagna soup in the same week and go through the effort of "transforming" it. In my mind you make a big lasagna if you're planning on having that for leftovers so to me this is weird and it seems like a lot of cooking for something that tastes pretty much the same

Honestly I would love a Lauren Toyota curated vegan cheese guide! I think that would be super helpful to people who aren't recipe creators and don't have a bunch of different vegan cheeses on hand at once to compare them, so we know what's best for what purpose.

This made me crave the lasagna soup soooo bad. 😀 I think I'm definitely going to do a variation on the creamy version of the lasagna soup…probably using cashew cream because vegan cream cheese is hard to find where I live. Thanks for the cozy inspo. It's finally gotten cold where I live. lol

Does anyone know what the “round” in veggie ground round is referring to? In the US, Yves just calls it “veggie ground,” so I wonder what the reason is for the discrepancy.

Haha Lauren I think you underestimate how much we eat. Every time me and my partner makes any of your recipes we end up eating it all because it's so good… 2 years into our relationship and we still haven't figured out how to cook to have leftovers haha xxx Love this idea!
