This vegetarian Pastitsio is easy to make and perfect for Meatless Mondays. The leeks add lots of mild onion flavor and the cheese makes it rich and filling. Add some béchamel for some creaminess if you like or follow the recipe for a delicious main course.

Printable recipe:

2 pounds of leeks (about 6)
¼ cup of olive oil
3 roasted red peppers
1 pound of Pastitsio noodles
5-6 Roma tomatoes plus 3-4 tablespoons olive oil
16-18 Kalamata olives, halved
3 tablespoons of butter
1 cup of grated Parmesan cheese
6 ounces of shredded mozzarella cheese, or more
6 ounces of feta cheese, crumbled
1 teaspoon dried oregano
¼ teaspoon crushed red pepper flakes or more

Preheat the oven to 350 °F, 180 °C.

Boil the pastitsio noodles in salted water for 10 minutes. Drain and place in a 9 by 13-inch baking pan. Add the butter and toss together until it melts.
Cut the dark green portions of the leeks off and save them for stock or soup.
Slice the rest of the leeks into thin rounds and soak them in cold water so that the dirt sinks to the bottom. Lift the leeks from the water and drain them well.
Add the leeks to a large pan along with the olive oil and cook them over medium heat for 6-7 minutes or until soft and golden.
Add the mozzarella cheese and parmesan to the pasta along with the crushed red pepper flakes and dried oregano. Toss the pasta so that the cheese is distributed evenly.
Spread the cooked leeks over the top of the pasta.
Slice the Roma tomatoes into rounds and place them on top of the leeks.
Brush the tomatoes with the olive oil and sprinkle the tops with salt.
Bake on the center rack for 30 minutes.
Remove from the oven and top with the olives.
Bake for an additional 15 minutes.
Allow the pasta to cool for 15-20 minutes to set and serve.

It looks delicious but why call it pastitsio though? Is that what they call it in Drama? Why not pasta and leek bake? No bechamel and so many other ingredients does not make it pastitsio of any kind.

God bless Dr Godwin for what he have done in my life,I’m here to testify about what Dr godwin did for me. I have been suffering from (GENITAL HERPES VIRUS) disease for the past 4 years and had constant pain and inching, especially in my private part. During the first year, I had faith in God that i would be cured someday. This disease started circulating all over my body and I have been taking treatment from my doctor, few weeks ago I came across a testimony of Rose Smith on the internet testifying about a Man called Dr Godwin on how he cured her from 7 years HSV 2. And she also gave the email address of this man, advise anybody to contact him for help on any kind of diseases that he would be of help, so I emailed him telling him about my (HSV 2) he told me not to worry that I was going to be cured!! Well, I never doubted him I have faith he can cure me too,, Dr Godwin prepared and sent me Healing Oil, Soap, roots and herbs which I took. In the first one week, I started experiencing changes all over me, after four weeks of using his Roots/ Herbs, Oil and Soap, I was totally cured. no more inching , pain on me anymore as Dr godwin assured me. After some time I went to my doctor to do another test behold the result came out negative. So friends my advise is if you have such disease or know anyone who suffers from it or any other disease like HPV, HBV, HIV, ALS, HBP, CANCER etc. you can contact Dr.godwin for help via drgodwin52@gmail or whatsapp +2348158184060..

Thank you Dimitra! I am going to make this today. We like to eat meatless meals at least twice a week. I bought a large quantity of leeks 2 days ago as they were on sale and was going to cut, wash and freeze them for future use. This recipe came just in time!
I really love your natural style of cooking. Thank you so much for sharing all these wonderful recipes with us.

Germaine Dubois says:

We don't have access to leaks here at my grocery store – so can onions be used.. will they need to be sliced thinly and sautéed until they are soft – this dish looks to be a great addition to a meatless meal.
