Team Fabio!! Welcome back for another episode of Fabio’s Kitchen – Season 4! Today we are making my ridiculously delicious Veggie Bolognese Pasta. That’s right…I said VEGETARIAN Bolognese. I understand that this goes against my family & Italian heritage…BUT I am here to deliver this masterpiece for all of my vegetarian & vegan friends because I love you all that much!

Here are the ingredients needed for my Veggie Bolognese Pasta:

Extra virgin olive oil
6oz dried spaghetti
¼ cup finely chopped carrot
¼ cup finely chopped celery
¼ cup finely chopped onion
1 tablespoon minced garlic
½ cup red wine
1 ½ cup finely chopped mixed veggies-
(cauliflower, broccoli, fennel, & brussels sprouts)
2 tablespoon tomato paste
2 cups tomato sauce
Fresh basil leaves
Salt and Pepper

Thank you Fabio! I'm Italian and I often cook for my vegetarian girlfriend. I also did the Bolognese sauce with lentils, they give that meaty look and taste if cooked properly and with the Bolognese base sauce. Grazie!

Secondo me puoi parlare italiano e basta. Ma ascolta quando faccio calzone per miei amici vegani non posso usare ricotta o formaggi di alcun tipo. Per questo motivo non posso definirlo un calzone. Why? its a freaking veggie pocket. (una tasca di verdura si, calzone no) Quindi forse la salsa non può nemmeno essere definita bolognese. Just sayin. Otherwise its a nice recipe and I might try it if I can get over the broccoli and cauliflower. Aspetta, penso di sentire che squilla il telefono dall'inferno

I’ve made Bolognese with chopped mushrooms and also with cauliflower rice. The cauliflower rice gives it that meaty look.
