I’m Mexican and I make my own traditional red sauce but I stuff my enchiladas with diced cooked potatoes with a little bit of the red sauce, to add some flavor, and serve them with chopped lettuce on top and some vegan cream. 😋😋

I prepared the enchiladas as you did in the video, but if I'm staying away from vinegar, I could probably double the lemon juice and omit the vinegar, don't ya think?

I made these today! I used a cole slaw bag from the produce section and beyond meat ground beef. I also used my homemade Worcestershire sauce (sugar free, gluten free, vegan) because I love Worcestershire sauce.
They were so good!! Btw, we ate all of them.

Made it this morning! It was better than I expected! I love the way the runny cheese sauce ended up firming into a thick but creamy layer, kind of like the ricotta layer in a lasagna. Even though it looks like a lot of cheese sauce before baking I think I may go with even MORE sauce the next time I prepare this to make that creamy layer a bit thicker. The cabbage did taste a bit vinegary (like sauerkraut) in the recipe which was okay by me, but others may want to leave that out for a more traditional flavor.
