Ho Ho Ho boy do I love this recipe.. These healthy, delicious, plant-based stuffing balls are tender and perfect and delicious for any holiday table. Not only are they oil-free, but in my opinion, they just knock the socks right off the regular ol’ lentil loaf.. and they’re easier to make! It’s a win-win. Check out the recipe below and give these balls a shot!
~*~ RECIPE ~*~
1/2 bunch stemmed kale
5-6 mushrooms, diced
3 celery stalks, chopped small
1 small yellow onion, diced
1.5 tablespoons minced garlic
1/2 teaspoon thyme
1.5 teaspoon rosemary
1 teaspoon oregano
1/3 cup dried cranberries, chopped
1/2 cup oats
1 tablespoon ground flax
1.5 cups cooked lentils
1 cup walnuts
1 tablespoon apple cider vinegar
Bake for 45 minutes at 360°. They might need a little longer. They will firm up a bit as they cool.
