Hey guys!

I hope you are all doing well. Welcome back to my channel and to another mid week meals. This video has three recipes that we have made mid-week with plenty of left overs for the next day. Each of the recipes can be easily adapted if you aren’t vegetarian and want to substitute with meat.

Love these – easy n budget friendly.

Try chickpea & potato curry

1 can chickpeas
1 onion, chopped
2 medium potatoes, cubed
1 cup passata (or 1 can chopped tomatoes)
2 cloves garlic
1/2 tsp cumin seeds
1 tsp ground corriander
2/3 tbsp oil
1 tsp salt
Large pinch black pepper
1 tsp chilli flakes
1/4 tsp tumeric
Chopped corriander
1 small red onion, finely chopped
1 lime

Chop onions and add oil and cumin seeds, cook till lightly golden. Add garlic and all spices, fry and add passtta/tomatoes, lower heat and allow to cook and thicken. Add the chickpeas including the water, 1/2 cup water and potatoes. Cover n cook until potatoes are done. Serve with chopped coriander, red onion and lime juice.

If cooked in a pressure cooker it cooks a lot quicker.
