Zucchini
chickpeas (de-shelled & strained because to remove shells you have to soak for 8 – 12 hrs and then rub peas shells come right off, iDont use any canned foods)
celery
carrots

I tried making this today. I ended up with an amazingly complex full-bodied gravy. I did find it had a bit too much sour (undoubtedly my fault). Next time I think I will try it without the wine and balsamic vinegar, and then add them at the end if required.
Made this a couple of days ago and it was very good. I had to guess a bit on the proportions but in the end I gave it a dash of this and a dash of that and voila, vegi gravy. Its time consuming for everyday cooking but awesome if your in the kitchen cooking a big meal and you have the time to nurtures this sauce.
