Vegan Pecan Pie with Homemade Whip Cream

This recipe is for a delicious 100% vegan pecan pie with a flaky crust, accompanied by a coconut whip cream.

Crust Ingredients
– 1/3 cup vegan butter
– 1/3 cup vegetable shortening
– 1 1/4 cup unbleached flour
– 2 tbsp water

Pre-bake crust for 10 min at 325 degrees

Filling Ingredients
– 2 cups pecans
– 2 tbsp coconut oil
– 2 cups coconut sugar
– 3/4 cup maple syrup
– flax egg replacer ( 4 tbsp ground flax – 8 tbsp water )
– 20 small saltine crackers
– 1 tsp cinnamon
– 1/2 cup vegan butter
– 2 heaping tbsp flour

Bake for 50 min at 325 degrees

Coconut Whip Ingredients
– 1 can full fat coconut milk
– 1 tsp vanilla
– 2 tbsp liquid sweetener of choice
