Today, I will share 3 delicious Korean vegan side dish recipes with you.
The fist vegan side is gluten free zucchini Jeon called “AeHoBak Jeon (애호박전)” using grated potato instead of flour.
The second vegan side is cooked bok choy seasoned with soybean paste called “CheongGyeongChae DoenJangMuChim (청경채 된장 무침)”.
For the last vegan side-dish, I will show you how to make soybean sprout japchae called “KongNaMul JapChae (콩나물 잡채) in Korean.

📕Gluten-free Zucchini Jeon (Yield: 7 Pieces)

Main Ingredients:
* 1 Cup Zucchini (⅛ tsp Salt)
* ⅓ Cup Onion
* ⅓ Cup Russet or Idaho Potato (⅛ tsp Salt)
* 1 Tbsp Red Hot Pepper (Optional)

* 1 lb Bok Choy (8 Cups Water, 1 tsp Salt)
* ¼ Cup Onion
