Vegetarian Sloppy Joes – Quorn Mince Recipe – One Pan Camping Recipe – Campervan Cooking

The Recipe
Serves 4
Ingredients:
1 tbsp oil or butter
1 onion, thinly sliced
1 large mushroom, diced
1 tsp oregano
500g passata (bottle or carton of sieved, cooked tomatoes)
2 tsp sugar
2 garlic cloves
1-2 tbsp balsamic vinegar
salt & pepper
1 large jarred red pepper, diced (optional but damn tasty!)
chilli flakes to taste (optional)
350g Quorn mince or alternative
4 brioche buns, or soft white baps
4 slices cheddar cheese
Directions:
Heat a large saute pan.
Add the oil, then gently fry the onion until softened.
Add the mushroom and continue frying until the mushroom pieces are dark and glossy looking.
Add in the passata, sugar, garlic and balsamic vinegar, along with the red pepper and chilli if using. Stir and let bubble over a medium heat for a few minutes.
Add in the Quorn mince, stir and cook for 8 more minutes.
Toast your buns, then pile them up with the mince mixture and a slice of cheese.
NOW TAKE THOSE BAD BOYS STRAIGHT OUTSIDE BEFORE EATING!!! 😂😂😂

Love sloppy joes on a pizza. I use pitta bread add the mixture, top with cheese
and 8 mins in the oven….sooo good. Cant wait to try the veggie version
Yeah.. I’ve never eaten a sloppy joe either.. I might try it in a pitta.. seems like it would be less messy 😁

Oh this brings back memories! I grew up in the States and my Mom made Sloppy Joes every now and then and we really liked them. She would start with browning ground beef. Then she would mix that with either a packet of McCormick's Sloppy Joe spice mix mixed with a can of tomato sauce (which seems similar to passata), or a can of 'Manwich Sloppy Joe Sauce'. Sloppy Joes were also one of the weekly offerings I had in the school cafeteria and they were very popular with the kids! None of these were ever served with cheese, though. Of course your vegetarian version looks much healthier! I haven't had a Sloppy Joe since school days, so will give yours a try!

Great delivery and content, but you may want to consider a microphone closer to you as you sound very distant and the rain didn't help. I only saw your channel whilst watching Rick's channel about your weekend at Ashen Plains yesterday and have already watched quite a few of your videos. I'm about to start van life myself after Xmas, and find your 'one pot' meals look very easy and practical with tasty looking results. Thank you and keep it up. 🙂
