In this video, we’re making three amazing vegan pasta recipes all of which are healthy, easy and packed with flavor! We’re starting with a quick marinara, then a pumpkin alfredo and finishing with a slow roasted tomato and garlic pasta!

10-MINUTE MARINARA
1 (28 oz) can diced or crushed tomatoes
1 tablespoon Italian herbs
Salt & pepper to taste
1 box of your favorite pasta

Add tomatoes and seasonings into a small pot. Bring to boil then reduce to low and simmer for 10 minutes. Serve with your favorite pasta and garnish with nutritional yeast.

SLOW ROASTED TOMATO & GARLIC
1 box cherry tomatoes
1 tablespoon olive oil
2 – 3 garlic cloves, sliced
Salt & pepper to taste
1 box of your favorite pasta

Add tomatoes to a small pan. Toss with oil, garlic, salt and pepper, and roast at 300ΒΊF for 60 minutes. Stir tomatoes into your pasta and garnish with some fresh lemon juice (if desired).

So I got to make the pumpkin alfredo and I was SO skeptical. It was nearing the end of the week and I was trying to make my ingredients go a little further. I had just the right amount of pumpkin puree in my fridge left over from making something else and had cashews (actually had run out of regular cashew milk) so this was so freaking perfect. Then I Made it. I haven't had creamy pasta in a while and it was SO GOOD!!!!!!!!!!! I can't even… Can't wait to try the blistered tomato one! Yum!
