Join me today while I prepare an all-time favorite breakfast; a traditional full English breakfast. I was supposed to be on my vacation right now out in London but unfortunately, that trip is postponed so I decided to bring a little bit of the UK to my apartment. Traditionally an English breakfast consists of fried egg, bacon, sausage, tomato, mushrooms, beans, fried bread, and black pudding. Obviously, majority of those things are NOT vegan, but fortunately, we have so many options today to replace these things (list below). This breakfast is so simple and keeps me full almost all day! I hope this inspires you to try something new while we are all stuck inside trying to stay healthy.
Fried Egg– Just Egg scrambled egg, you could also make a simple tofu scramble if that is more accessible for you
Sausage–Field Roast Breakfast Sausage, Beyond Breakfast Sausage
Bacon–Sweet Earth Bacon or Tempeh (I didn’t have either on hand so I just made sausage)
Beans– Walnut Acres Baked Beans or Bush’s **Vegetarian** Baked Beans
Mushrooms & Tomato– No substitution needed
Toast– Your favorite vegan bread toasted with vegan butter (I use Country Crock “Plant Butter”)
I also served this with an English Breakfast Tea with sugar & coconut milk
