Simple vegan potato leek soup recipe
Ingredients
2 tbsp oil (I used avocado oil)
1 small onion, diced
3 medium leeks sliced and rinsed (use white and light green part only)
1 tsp garlic
2 tsp italian seasoning
5-6 medium potatoes (I used golden, but russet works best)
4 cups vegetable broth
1 cup non dairy milk (plain unsweetened)
2 bay leaves
salt and pepper to taste
Set Instant Pot to saute. Once warm add in oil, onions, and leeks. Stir and saute 5 minutes. Add in garlic and italian seasoning and saute another minute. Place remaining ingredients in instant pot, stir and turn pot off. Place on lid and set instant pot to manual/high for 6 minutes. Quick release when done. Use blender to make soup creamy and serve with your favorite toppings. If you don’t have an instant pot/pressure cooker, you can simmer on stove 20-25 minutes or until potatoes are fully cooked.
