Macaroni & cheese has its origin in the United Kingdom, and it has to be the easiest yet the tastiest recipe I have known. You could bake it or have it just like that if you like. Do try the recipe! 🙂
Serves 2
Prep time : 45 min
Baking temp : 180°C
Cooking time : 15 minutes
Baking time : 35-40 minutes
Cooking macaroni
1/2 cup uncooked macaroni
1 liter water
Salt to taste

For the white sauce
1 + 1/2 tbsp unsalted butter
1 + 1/2 tbsp plain flour
A pinch pepper
3/4 cup milk
Salt to taste

Mac & cheese
1/4 cup cheddar cheese
1/4 cup plain cheese
1/4 cup capsicum (optional)
Method :
1. In 1 liter of water, add enough salt to make it a little over salty. Once it boils, add 1/2 cup uncooked macaroni and cook till 90% done. Drain and run through cold water.
2. For white sauce, add 1 + 1/2 tbsp butter to the pan, once it melts, add 1 + 1/2 tbsp plain flour, whisk well for a minute. Slowly add 3/4 cup, keep whisking till it thickens. Add salt, pepper. Take off heat. Add cooked macaroni and capsicum (optional), mix and add to baking bowl.
3. Sprinkle 1/4 cup grated cheddar, and 1/4 cup plain cheese over. Bake at 180ºC for 35-40 minutes till golden brown from top.
