Ras El Hanout Vegetable stew
1 tbsp Olive oil
3 tsp ras el hanout spice (or a combination of cinnamon, cumin, allspice, coriander seed and sweet paprika)
1 small courgette, cubed
1 can chickpeas, drained and rinsed
1 can chopped tomatoes
20g Coriander, stalks chopped and leaves
Add the olive oil to a pan on medium heat
Add the courgette and saute for 2 minutes
Add the spices, seasoning, coriander stalks and chickpeas and stir for another 2 minutes before adding the chopped tomatoes
Simmer for 5-10 minutes and serve
Garnish with coriander leaves
