Ninja Foodi Ratatouille Vegan & Vegetarian In A Tiny Home Full recipe

Absolutely Amazing! Even if your not Vegan.
2 TBS Olive oil
1 TBS minced garlic or can put a whole garlic in to really infused garlic flavor
One Chopped or diced onions
1 cup vegetable broth or water
2 tsp dried oregano
1 tsp fennel if you have it
1 t. salt and pepper each
1 eggplant, cut into chunks
2 med yellow squash
2 large bell peppers, seeded and diced can use different colors
1 can diced tomatoes , you can also use plum tomatoes if desired
Heat 1 to 2 tablespoon of the oil in the foodi over medium-high heat on Sautee, sauté the garlic and onions to tender (about 1 minute) Stir in the broth then add the oregano, fennel salt and pepper and tomatoes paste. Stir Add the eggplant and the peppers, stir. Add tomatoes. Add broth. I use better than bouillon veggie broth and also garlic flavor. PC 4 minutes. quick release. Enjoy! This can also freeze well. Add more broth to make more of a soup, add pasta and Italian seasonings for a Minestrone , add carrots and potatoes meat cooked separately like a roast then add so already cooked veggies to not turn to mush ( this is I you have any leftovers) you can also serve over rice or quinoa or pasta be creative and have fun with this dish it it taste wonderful and there’s so much you can do with it.
This is how I cook I try to re-purpose my meals leftovers into something new for example the other day I made Ratatouille for the next meal added rice under that, then today added butternut squash pasta and more broth leftover rice leftover tomato paste and garlic cloves for a nice meal tomorrow I’ll add spinach and elbow macaroni and more broth, to make a. Minestrone Soup. II woke up to snow today so this is nice!
