Vegan Mac and Cheese
1 pound bag of pasta
2 tablespoons of vegan butter
2 tablespoons of flour
8 tablespoons of nutritional yeast
1.5 cups of non-dairy milk (soymilk)
Salt and pepper to taste
Cook pasta per instructions on the package.
On medium-low heat melt 2 tablespoons of butter. Stir in 2 tablespoons of flour until mixed in well with butter. Add milk to the mixture and whisk together to start removing any clumps. Add nutritional yeast, salt and pepper and continue to whisk. Remove from heat once it starts to simmer and is thoroughly blended.
Pour cheese sauce over drained and cooked pasta and mix.
