List of ingredients for the this tasty curried plantain:

2 to 4 ripe plantains
1/2 to 1 can of coconut milk ( the more coconut milk, the juicer) – 13 oz can
1/2 to 1 cup of cooked quinoa
2 small carrots
1/2 yellow bell pepper
1/2 cup cut green beans
3 to 5 cups of fresh mushrooms (I like to mix Oyster, baby bella and Shiitake mushrooms)
1/2 leek (the white root + 2 green leaves)
1/2 white onion
4 to 8 cloves of garlic (I tend to use extra garlic because I love it)
A small thumb of ginger
1 15oz can of lentil
1/2 to 1 cup of fresh cilantro
Curry powder, black peppercorns and salt to taste
1 to 2 tablespoons of nutritional yeast

Girl, I literally just made this…..OMG, so easy & soooooooo delicious. I wish I had used 3 plantains, but it's still out of this world. I could eat this every week, without exception. I didn't have any green beans on hand, but it didn't matter. Girl, you are Fire! You need to make a cook book & please put plenty of family pics, especially of the babies…they make my heart smile! They are so beautiful!

😊 Merci de partager Fabiola. J'ai une recette similaire où à la place des lentilles j'utilise des haricots noirs et quelques pommes de terre pour que la sauce soit plus épaisse et bien onctueuse. Ah c'est intéressant les mélanges qu'on essaie pour essayer de retrouver le goût original des plats à base de viande😅. As tu essayé le burrito fait avec une farce de patate douce, plaintain, pois chiche et haricot rouge et noir? Bon appétit😋
