Seriously, I’m not one to brag but this Chili recipe has placed MANY TIMES now in various Chili Cookoffs. I’m not kidding, and it not only came in 2nd place against nine other NON-Vegan entries… it happened in TEXAS!

Highly recommended! I made this tonight. My husband and SIL enjoyed it. Chili was spicy for me and I left out the Chipotle chili pepper. I didn't have fresh garlic, I used about a heaping tablespoon of jarred chopped garlic. My meat substitute was finely chopped fresh mushrooms. I had my chili over rice, hubby and SIL had theirs over cornbread. Thanks so much!

Better flavour if you fry the onions, bell & chilli peps for about 8 mins, (adding garlic halfway), THEN add the spices (paprika, cumin, turmeric mixed with a tbsp flour), and sort of scorch them in, making a paste for a minute, then SLOWLY adding the stock.
Chilli powder, really !? Use chopped fresh chillies for real flavor and vibrant heat! (Last time I used 8 Bird's eyes!).
