Sometimes the classics are the best. Here is a creamy leek and celery soup made in my camper van and enjoyed it in a beautiful location.
Half an onion (chop into small cubes)
2 Small leeks (wash well, cut in half lengthways & chop)
8 Sticks of celery (Finely chop)
3 Small potatoes (Peel & chop into small cubes)
A little flour (1.5 TBSP)
1 TSP of garlic powder
Plenty of vegetable stock (approx 1.5 Ltr)
1 mug of almond or soy milk
Knob of vegan butter or spread
Salt & Pepper
Melt spread/butter in a large saucepan.
Add onion fry gently for 2-3 mins.
Add leek, celery and potatoes and fry gently for 8-10 mins.
Once the vegetables are tender, add flour, stir well and cook off for a few mins.
Add garlic powder, season with salt and pepper and stir well.
Add stock in parts, mixing well.
Bring to boil and simmer for 10-15 mins to reduce liquid.
Add the milk and stir.
Taste and season further if necessary.
