Welcome to Lettuce Veg Out with vegan Registered Dietitian Nicole Stevens. Today we’re vegging out on a simple recipe for a soft, fluffy and cinnamon-spiced vegan coffee cake!
This delicious vanilla cake has a layer of cinnamon sugar through the center and a crunchy oatmeal-almond streusel topping. The streusel topping adds an amazing texture to this soft cake!
You may be wondering why the cake recipe doesn’t actually include any coffee and that’s because coffee cake is traditionally meant to be served with coffee! This cake tastes absolutely amazing with coffee or tea.
This recipe is 100% non-vegan approved and didn’t last long in my house, it was such a hit! I hope you enjoy as much as we did.
