CHEEZY MUSHROOM MELT RECIPE ———–
INGREDIENTS

– 8 oz. sliced portobello mushrooms
– 1 green bell pepper
– 1 red onion
– 1 tbsp olive oil
– 4-6 tsp minced garlic
– pepper (as desired)
– vegan cheese (i like to use yellow and white)
– baguette or bread of choice

1. Chop your green bell pepper and red onion.
2. In a large skillet, add your olive oil, mushrooms, pepper and onion and turn on medium high heat.
3. Once it starts sizzling, take it down to medium and sauté for a few minutes.
4. Preheat your oven to 350°F.
5. Take a pan and spray a little veggie oil onto it and place your (sliced) bread on top of it.
6. Sprinkle a little vegan cheese on each side of the bread and place pan into the oven and heat for about 10 minutes.
7. Once you take it out, add your mushroom mixture and you’re ready to eat!

I love mushrooms and always have them on hand, so this is good inspiration. Sometimes I tend to over buy certain vegetables. I like your hot sauce there. I bought a bottle of Siete's Traditional hot sauce and it is amazing. I know it's vegan, and I think also gluten free. I think they're an Austin company. Check 'em out. (I previously was not into hot sauce, but since the Pandemic has had me cooking everything for myself, I am branching out as a flavorphile!)
