Peanut Butter, Chocolate, and Banana Oatmeal

Roasted veggies + chickpeas and farro
1 shallot, diced
1/4 of a small onion, diced
1 cup of farro
Vegetable broth to cook the farro, onions, and shallot
1/2 of a sweet potato
1 1/2 cup of canned chickpeas
2 bunches of broccolini
lemon juice
seasoned with salt, pepper, garlic powder

Tofu scramble with vegan sausage
6 oz of extra firm tofu
1/2 tsp turmeric
1/2 tsp garlic powder
1/2 tsp onion powder
A pinch
1/4 tsp black pepper
1/2 tsp Kala namak (black salt for an eggy flavor. Can be found at a local international or Indian store or on amazon)
2 tsp nutritional yeast
3 tbsp plant milk
1 cup cooked veggies

Go-to quick and easy dessert, strawberries with whipped cream and nuts
6 strawberries, washed and sliced
Sweetener of choice
Chopped walnuts
¼ cup of dairy-free whipped cream

Chickpea fritters

Stuffed bell peppers

Tofu Bowl
Extra firm tofu (frozen and then thawed out)
1 tsp olive oil
1 ½ – 2 tsp liquid aminos, coconut aminos, or soy sauce
2 ½ tsp of a bbq spice blend
Cooked white rice
½ red bell pepper, sliced
¼ of a small onion, sliced
Spinach (1 cup if fresh or ¼ cup if frozen)
Salt + pepper to taste
Zhoug sauce

Creamy mushroom pasta
½ pound (4-5 servings) cavatappi
2 cups of sliced baby Bella mushrooms
3 garlic cloves
¼ of a small-medium sized onion
1 ½ tbsp liquid aminos, coconut aminos, or soy sauce
1 tbsp all-purpose flour
2 cups of plant milk (I use almond and oat. Add more if needed)
1 tbsp nutritional yeast
Season with salt, pepper, and garlic powder to taste
Serve with fresh parsley
