THREE INGREDIENT KETO ICE CREAM BARS – EASIEST KETO ICE CREAM & POPSICLE RECIPE
It’s hard to believe something so creamy and delicious can come from just 3 ingredients. This keto ice cream only involves 3 main ingredients – cream, vanilla and sweetener. Of course, we coat these sugar-free ice cream bars with chocolate, so that could technically be a 4th ingredient, but the best part is the ice cream!
These ice cream bars are begging to be made this summer! It’s the perfect frozen treat on a hot day. And these chocolate covered keto ice cream bars are easy to make. Just mix your low carb ice cream base. Pour into a popsicle mold. Freeze. Then coat with melted chocolate and coat with nuts!

KETO ICE CREAM BARS RECIPE
1 pint heavy whipping cream
1/2 cup Confectioners Swerve or ¼ cup Lakanto Powdered Monkfruit
1 1/2 teaspoon vanilla extract
7 drops vanilla cupcake extract, optional
pinch of salt
7 oz keto chocolate chips (white, milk or dark)
1 1/2 tablespoons coconut oil
chopped nuts, optional
Whisk together all ingredients in a small bowl until combined.
Pour ice cream mixture into popsicles molds and insert a popsicle stick. Freeze until hardened or overnight.
Melt chocolate in a microwave safe bowl at 30 second intervals, stirring in between, until melted. Stir in coconut oil to thin out the chocolate.
Dip ice cream bars in the melted chocolate until coated with chocolate.
Sprinkle nuts over the melted chocolate and place on parchment paper until chocolate has hardened.

What is the white thing your pouring on top of the chocolate?
Amazing , but I have a question , I have a vanilla extract with a certain percent of alcohol , will be there a problem in the process of freezing all the mixture ?
