Today we will make a vegetarian pasta recipe which is called pasta Primavera. Pasta Primavera means Spring pasta which has to be fresh and full of vegetables. It is perfect for a light meal full of vitamins and also a great choice for vegetarians.

For this recipe we used:
30 gr / 1 oz Extra virgin olive oil
500 gr / 17 oz Penne pasta (but you can use any pasta you like)
1/2 Lemon
250 gr / 8.8 oz Cream (dairy free)
50 gr / 1.7 oz Parmesan (but If you are vegetarian skip this ingredient)
10 gr / 0.35 oz Salt
15 gr / 0.5 oz Italian spice mix
10 gr / 0.35 oz Ground pepper
70 gr / 2.5 oz Carrots
70 gr / 2.5 oz Zucchini
100 gr / 3.5 oz Broccoli
50 gr / 1.7 oz Red bell peppers
150 gr / 5.3 oz Cherry tomatoes
150 gr / 5.3 oz Asparagus
1/2 White onions
1/2 Red onions
3 cloves of Garlic

This quantity is easily enough for 4 people.

We start by peeling the asparagus. We just peel the bottom 2/3 of the asparagus. That is the part which is more fibrous. We cut off the top because that is the most precious part of the asparagus and we slice up the rest as you see. We clean the carrots and we cut them julienne. Carrots give a very nice sweet taste to the dish. Searing them will release their natural sugars. We continue with the red bell peppers. We clean and slice some red onions. Don`t slice them too fine. We slice the zucchini and we proceed to clean and cut the broccoli. We cut some cherry tomatoes in half and we clean and dice some garlic and last we grate some Parmesan. That was all the prepping that is needed for this recipe.
We add the pasta to the boiling water and we season with salt. In a pan on medium heat we add the cream followed by the Parmesan. We stir until it melts and we season with a pinch of salt and ground pepper. Last we add a squeeze of lemon juice and we add the pasta to it. Our base for the pasta Primavera is done so now we proceed by stir frying our vegetables.
In a hot pan we add the olive oil and we add the carrots. Followed by the asparagus. We give it a mix and we add the white and red onions with the broccoli. We season with salt, ground pepper and the Italian spice mix. We let them sir and we continue by adding the broccoli and the zucchini. We cook them for a few minutes and we are done.
We add the vegetables to our pasta, we give them a last mix and this delicious meal is done.
We finish it with some Parmesan (vegetarians can skip the Parmesan) on top and some freshly chopped parsley. It is an easy vegetarian pasta recipe which bursts of flavor.
The colors, the freshness of this vegetarian pasta dish is amazing.
