Ultimate Slow Cooker Potato Soup | One Pot Chef

My Ultimate Slow Cooker Potato Soup is fully loaded and guaranteed to please when the weather turns cold. Potatoes are combined with onion, garlic and chicken stock, then slow cooked until tender. The soup is kicked up a notch with the addition of cream cheese and cheddar cheese, then topped with crispy bacon, spring onions and more cheese! It’s ridiculously easy to make – give it a go!

INGREDIENTS:

1kg of Potatoes (peeled and diced)
1 Small White Onion (peeled and diced)
2 Teaspoons of Minced Garlic (about 2 cloves)
2 Tablespoons of Butter
Salt and Pepper
4 Cups of Chicken Stock (1 Litre)
2 Cups of Grated Cheddar Cheese (plus extra for garnish)
125g of Cream Cheese (at room temperature)
1 Spring Onion (finely sliced)
Bacon (pan fried until crisp)

Boiling potatoes in the US are white red and gold those three as russet so not boiling potatoes.
