So we think we’re hot shots when it comes to making the perfect vegan breakfast but something that has always needed a but of imagination was scrambled tofu. But we have done out research and we’ve found a secret ingredient that takes out “scrambled egg” game to new heights. This is an amazing revelation and something everyone needs to try! I love your new book but wish it had the nutritional value of the food, for us poor dieters. Just made the scramble tofu and it was the best I've made yet 😋

100g silkin (soft) tofu
100g firm tofu
1/4 tsp tumeric
3/4 tbsp tamari
1/4 tsp onion powder
2 tbsp gram flour
Sulfur salt
1/4 tsp sulfur salt

Mash tofu
Mix together Tumeric, tamari, onion powder and gram flou

Pan high heat
Add 1 tbsp oil, tofu, spices, and slowly add sulfur salt. Stir constantly

Take scrambled ‘egg’ off heat and put on toast

I’ve been wanting to make a vegan low and slow style scramble for a while now and decided to try this recipe with Lite Firm silken tofu (the boxed Mori-Nu variety). With Italian salsa verde spooned on top, this is easily one of the best vegan egg recipes I’ve tried.

I CBF buying that fancy salt just for one recipe. But I kinda wanna try that with a bit of savoury yeast flakes, some finely chopped coriander stem, and maybe a drizzle of sriracha. Maybe a little Mushroom too.

1/4 Teaspoon of Turmeric.
3/4 Tablespoon of Tamari.
1/4 Teaspoon of Onion Powder.
2 Tablespoon of Gran Flour.
1/4 Teaspoon of Kala Namak.
