Creamy Spinach Pasta
-Bow tie pasta boiled
– 3 large handfuls of fresh spinach
1. Sauté seasonings on MED 3min (red pepper flakes, garlic powder, pepper, Italian seasoning) with fresh garlic, sundried tomatoes, & fresh parsley in 1/2 olive oil 1/2 butter
2. Add 1 cup heavy whipping cream to boil (optional: add wine)
3. Add shaved or fresh Italian cheese…Parmesan works best
4. Simmer on low for 4-5 while whisking cheese into sauce
5. Set aside to pour over noodles and spinach

Homemade sundried tomatoes
✨Add to pastas, stuffed chicken, & salads

-1 carton of grape tomatoes, sliced in 1/3
-Drizzle with olive oil & season with coarse salt, fresh ground pepper, garlic, and Italian seasonings…add fresh herbs
-Cook in oven for 2 hours on 250degrees
•Refrigerate in mason jar up to 3months

Normally through the week I eat the same thing every morning, its a plain toasted bagel with a thin layer of my home made avocado spread, it sounds wierd but its good.

Normally I make whatever I am feeling for lunch. Maybe its a cheese pizza, just a sandwich, or nothing if I'm not hungry by then.

Then for dinner my parents make dinner, last night we had pork, pepper, and potato skewers (my mom a made a vegetarian safe version for me) with some dinner rolls and some butter.

I am 13, so there is a certain extent to what I can and cant eat. For example I also have anemia meaning I need the red meat for the iron in it. But we substitute the meat with high iron foods and we live farther from the city so our tap water has a lot of the iron I need.
